Hospital Food Takes Artistic Twist

Their canvas is as commonplace as a block of ice, a watermelon or a big hunk of cheese. But with ice picks, knives and talent, they transform them into edible works of art.

So who's behind those clever culinary creations that make holidays, open houses and other special events at Genesis Medical Center both flavorful and fun? Credit the talents of Food Production Supervisors Steve Friedrich and Charles Guthrie.

From an ice sculpture of Santa's sleigh and the Eiffel Tower to a mouse's house made of cheese, this dynamic duo brings life - and art - to ordinary hospital foods.

"Not all hospitals make a commitment to having trained chefs," says Steve Zurkamer, Manager of Food & Nutrition. "With the talent of both Charles and Steve, and a catering staff that is top-notch, we're proud of what we accomplish not only for special events, but each day."

An ice sculpture of Santa's sleighWith the special touch of Jackie Stichter, Food & Nutrition, the carved creations become accessorized with fabrics, knick-knacks and decorations she brings from home.

Zurkamer adds, "With the skills and expertise that we have in-house, we can put on great catered events and holiday parties much more economically."

So where do the ideas come from for those impressive ice sculptures and fun fruit and vegetable center-pieces? (Also known by the French as "Garde' manger," the art of cold food preparation.)

"Each year, the Spirit Committee gives us a theme, and we take it from there," says Charles Guthrie, West campus Food Production Supervisor.

"Things just come to you as you begin to create a new sculpture or tray. To keep us up-to-date, we use our background and experience and always try new products and the latest trends. It's also great to attend the National Restaurant Association shows to see the competitions - and get some great ideas for ice sculptures and more."Culinary creations

Both Friedrich and Guthrie bring previous restaurant and hotel experience to the table. As the East campus Food Production Supervisor, Friedrich reflects on his 14 years at Genesis. "The challenges faced in the health care arena are different, but just as exciting," he says. "The opportunity to help people and build relationships in a professional environment have made this a very rewarding position, especially around the holidays and with all the work that goes into the parties on both campuses."

Zurkamer adds, "The whole staff rallies around that week of Christmas parties. It's a lot of work in addition to the daily routine, but the results are well worth it."
